When you're viewing the gallery, immediately above the thumbnails you should see the title of the section ("Latest Photos" or "Latest Replies to Reviews," for example). To the right of that should be something to the effect of "15 Images Per Page;" clicking this should show a menu with the options you're looking for.
It might be different in other templates, but that's where it is in the one I'm using (presumably the default).
